YUMMY GLUTEN FREE LEMON CAKE

Ingredients
  

  • 3 tsp baking powder
  • 1 tsp sea salt
  • 1 3/4 cups gluten free flour
  • 2 ripe bananas
  • 3/4 cup Chrisopigi EVOO
  • 1 tsp vanilla essence
  • 1/4 cup non dairy milk (eg almond)
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1 cup castor sugar
  • 1 lemon
  • 1 tbsp lemon zest

Instructions
 

  • Preheat oven to 180 deg. Celsius and grease cake tin.
    In a medium bowl combine baking powder, salt & flour.  Set aside.
    In another medium bowl mash bananas well and add the Chrisopigi EVOO, milk and vanilla essence.  Whisk everything together making sure there are no lumps.
    Once combined add the coconut sugar and the eggs.  Do not overmix.
    Pour batter into prepare cake tin and bake for approximately 45 minutes or until cake skewer comes out clean.
    Once cooled turn out cake onto rack.
    Mix Lemon juice, zest and caster sugar and pour over cake.
