CHOCOLATE CHIP BISCUITS

Ingredients
  

  • 1 cup Chrisopigi EVOO I
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp sea salt
  • 1 tbsp vanilla essence
  • 1 large egg
  • 1/2 tsp baking soda
  • 2 cups high grade flour
  • 2 cups Nestles chocolate chips

Instructions
 

  • Preheat oven to 180 deg.C and line two baking sheets with baking paper.  Set aside.
    Add the Chrisopigi EVOO, both sugars, salt and vanilla essence into a large mixing bowl and mix until you have a smooth consistency.
    Gently mix in the egg and blend until smooth.
    Add the baking soda and the flour and mix until there are no dry spots of flour.
    Fold in the chocolate chips
    Shape the batter into balls (approximately two tablespoons each) and place them onto the baking paper.  This batter should make two dozen, so a dozen per sheet.
    Flatten with a fork and lightly sprinkle with more salt if desired.
    Place in the preheated oven for 10 to 12 minutes or until golden brown and then cool for five minutes before turning them out onto a rack.
