GREEK SALAD
Ingredients
- 2 cups seeded and diced tomatoes
- 2 cups seeded, diced and peeled cucumber
- 1 cup diced red bell pepper
- 1/4 cup pitted kalamata olives or other brine cured black olives, halved
- 1/4 cup diced red onion
- 3 tblsp chopped fresh Italian parsley
- 3 tblsp Chrisopigi EVOO
- 1.5 tblsp red wine vinegar
- 1/2 tsp dried oregano
- 1/2 cup crumbly feta cheese
Instructions
- Toss ingredients in a bowl and gently mix in cheese. Season with salt and pepper and serve.
